Our vodka sauce contains just enough cream so as not to mask the tasty taste of the tomatoes. Seasoned with pieces of fresh basil, it is velvety and has a good taste of parmesan, to which is added a subtle aroma of nuts.

Uses: 

Although vodka tomato sauce is traditionally served with penne, it's just as delicious with gnocchi or tortellini. You can also use it as a base for your cannelloni. The average proportions of tomato sauce and paste are 375 mL (1 1/2 cup) per 500 g (1 pound). Don't throw away all the pasta cooking water: it's a good idea to add some to the sauce. Stir 1/4 to 1/2 cup or a ladleful of cooking water into your sauce before adding the pasta. This salty, starchy water not only adds flavor, but also helps the sauce adhere to the pasta, in addition to thickening it.

Distinguishing Elements:

Nothing beats the taste of plum tomatoes ripened under the Mediterranean sun and seasoned with fresh, locally grown aromatics. One of the reasons why our sauces have a creamy texture comparable to that of home-made sauces is that they are produced in small quantities and cooked over a flame, as Italian mammas do, which allows the water to evaporate little by little.
